Food and Beverage Supervisor

About the role

The Food and Beverage Supervisor will lead front‑of‑house dining and bar operations for Belmond Safaris, ensuring every guest receives an exceptional culinary and beverage experience. You will coordinate with the Head Chef, manage staff rosters, and uphold the highest standards of service, hygiene and hospitality.

Key responsibilities

• Oversee all F&B service areas, including the main dining room, bar, boma and private bush dining setups.
• Coordinate with the Head Chef and kitchen team to ensure smooth service delivery and timing.
• Create fair staff rosters, manage shift handovers and maintain high standards of grooming and professional etiquette.
• Monitor stock levels for equipment, bar inventory and consumables, conduct regular stock takes and manage wastage.
• Supervise, train and mentor front‑of‑house and bar staff, fostering teamwork and continuous improvement.
• Ensure compliance with health, hygiene, safety and sanitation standards across all F&B areas.
• Take guest orders promptly, provide knowledgeable beverage recommendations and present dinner wines each evening.
• Set up the bar according to Belmond and LQA standards and support special events such as sundowners and morning specials.

Required profile

• Minimum 2–3 years of F&B supervisory experience in a hotel or lodge; safari lodge experience is a strong advantage.
• Excellent wine and beverage knowledge with strong organizational skills.
• Good English communication skills and the ability to work independently.
• Attention to detail, excellent time‑management and leadership abilities.
• Computer literacy with proficiency in basic computer applications.
