Head Chef

About the role

The Head Chef will lead the culinary team at Eagle Island Lodge, delivering innovative and high‑quality cuisine that exceeds guest expectations. This hands‑on leader ensures smooth kitchen operations, strict hygiene standards, and continuous staff development.

Key responsibilities

• Oversee daily kitchen activities, ensuring freshness, quality, and adherence to recipes, menus, and SOPs.
• Manage stock levels, control wastage, and monitor food costs to minimise spoilage.
• Uphold health, safety, and hygiene standards, including accurate HACCP temperature logs.
• Provide training, supervision, and mentorship to junior kitchen staff.
• Create and implement departmental SOPs, monitor expenditure, and protect confidential information.

Required profile

• Minimum five years of experience in a senior culinary role within luxury hospitality or food & beverage.
• BGCSE or higher with good grades in English and Mathematics; culinary diploma preferred.
• Proven leadership ability and experience coordinating diverse teams.
• Strong knowledge of various cooking styles, including à la carte, fine dining, breakfast, and casual dining.
• Excellent verbal and written communication skills and computer literacy.
